Healthy cooking chef makes appearance in Needles
NEEDLES — Eating healthy can sometimes feel like a chore and not something that people can enjoy doing, unless they’ve done it their whole lives. For someone who is wanting to get into that lifestyle it can be difficult and at times very hard to stick to it.
Mark Anthony, a vegan and vegetarian chef recently came to Needles Seventh-day Adventist Church and gave a talk on how people can start developing healthy eating habits as well as demonstrating an easy recipe.
“I grew up in South Dakota and started cooking up in Mount Rushmore back when I was 14 years old. My brothers and I used to work the kitchens up there so I’ve been cooking ever since,” said Anthony. “After a few years, I found my self in Las Vegas and started cooking for a lot of celebrities such as Jack Nickolas, Montel Williams, Styx, Journey and a lot of other rock bands.” During this time Anthony was out of shape and being a chef around food all day didn’t help, his doctors told him that he needed to make a change so he decided to do so in the most chef like way. “The main reason I switched to teaching healthy cooking is because I was in such bad shape and when I started changing my diet then I started to get a passion to help other people,” said Anthony. “I see people everywhere that have the same problems I had and so that’s what really gave me a passion to help other people.” Mark Anthony also has a cooking show on smartlifestyTV.com, goodnewstv, Ifood.tv which get about 20 thousands views a month and he is working with his team to get on more networks to spread his healthy recipes to everyone.
One of the biggest obstacles that people run into when trying to eat healthy is not having enough time to cook healthy during the day, which is a valid argument since we do live in a fast paced society and time is money as the saying goes, but Anthony has a solution for healthy eating in a fast paced world.
“Eating healthy is faster than eating animal products because you don’t have to cook fruits and vegetables,” said Anthony. “It is a lot faster to make a salad or grab some fruits and vegetables than making a steak or going to a fast-food chain. A good tip for people who want to live a healthy life style in a fast paced world is batch cooking. I make big batches of rice, beans, quinoa and other items then I put them in quart baggies and press them down until its flat then I stack them up in my freezer. So if you want to make something fast you just grab the baggie out of the freezer and since they are already cooked you just heat it up, add some flavor and you’re done.”
For a person who is thinking about changing their lifestyle to a healthier one can have questions on whether to make an abrupt change or to take it slow.
“Making a fast change or taking baby steps in changing to a healthier lifestyle is all right, a long as you commit to continue taking more steps,” said Chef Anthony. “So many people get on the healthy path, take one step and they stop and they don’t do anything else. You have to keep on taking steps and eventually you will become a healthier person, since the hardest part in anything whether it be eating healthy or exercising is taking that first step.” Sometimes it takes a while for a person to start eating a salad without any dressing so Chef Mark Anthony has a simple dressing one can do to substitute for ranch or another dressing sauce that has a lot of calories. “My natural healthy dressing is a Honey Banana Dressing,” said Chef Anthony. “It takes 1 cup of water, 2 ripe bananas, 4 tablespoons of red wine vinegar, 4 tablespoons of honey, 2 tablespoons of dijon grain mustard, 1 table spoon of cumin, 1/2 teaspoon of sea salt or lemon juice and a pinch of red pepper.
