Food and music fuse in Cleveland’s 2 Chefs and a Beat pop-up series

CLEVELAND, Ohio - Sometimes you need an outlet for all your creative energy. That’s exactly what Carlos “Los” Singleton was looking for when he teamed up with some of his service industry friends to create the music and food-fused, reoccurring pop-up, 2 Chefs and a Beat. The next takes place 8:30-11:30 p.m., Monday, June 18, at CODA in Tremont at 2247 Professor Ave.

For the events, Singleton, a line cook at Ohio City’s Soho Chicken and Whiskey, has joined forces with Michael “Mustard” Logan, a former Soho cook and current front-of-house employee, to become the “Los and Mustard” part of the “2 Chefs.” The “Beat” is Brian “Zip” Zippert, the Greenhouse Tavern’s bar manager who also happens to be a DJ and producer. 


“We all have a passion for food and all have a passion for music,” Singleton says. “We started bouncing around ideas about ways to combine both.”

When Singleton assembled his culinary crew, he just needed a location. The 2 Chefs and Beat event has popped up at B Side Liquor Lounge and Huron Point Tavern in the past. They found a natural fit in CODA, the music club below Dante Boccuzzi’s Dante Next Door restaurant, where Singleton once worked as a line cook. 

“I know he has a passion for music and food,” Singleton said. “I knew once I brought the idea to him, it would take flight.”

It’s no accident that this event is on a Monday night. The trio wanted to create something their fellow service industry friends could go to.

For each event, the Singleton and Logan experiment with new themes. In the past, it’s been a New York concept influenced by the Big Apple, and once they hosted a late-night brunch. This time around, it’s “California Love,” and you can expect West Coast-inspired eats and songs spun by DJs Sample God and Guilty Pleasures. Local musicians Jordan Graham and Rosello will also perform.

Switching up the themes every time keeps the cooks on their toes when it comes to collaborating. Singleton loves to put a twist on fine dining and Italian that he picked up from working at Dante. You’ll find Logan playing with the Southern cuisine that Soho embraces.

“Ultimately, we’re two different people,” Singleton says. “Mustard is the face of the party. He’s a hell of a human being; he’s very unique. We just have opposite minds. Now that he’s a front-of-the-house worker, he sees things that I don’t. His thoughts and my thoughts just bounce off each other different.” 


2 Chefs and a Beat events let the cooks take anything they’ve been wanting to experiment with for a test drive. Singleton says that recently, he’s been trying his hand at more vegan fare.

“Lately, I’ve been venturing off to vegan food,” Singleton says. “Vegan options have really been driving me. No matter what the theme of the night is, I try to at least create one or two vegan-inspired dishes.”

The events are ultimately all about letting everyone have a little fun outside of the day-to-day.

“I love my job, but we all love something we can do to express ourselves outside of the work environment,” Singleton says. “We get to reach outside of our own menus and just do something fun and have a good time.”
