New North Side barbecue shop will focus on speedy sandwiches
The owner of San Antonio’s celebrated Papa’s Burgers is getting into the barbecue business with a new concept on the North Side that will focus on a tight sandwich lineup designed to cater to grab-and-go diners.
Papa’s Quickdraw BBQ is set to open June 18 at 12054 Blanco Road, across the street from Winston Churchill High School. The menu will feature smoked chunky brisket, pulled pork and chicken sandwiches mixed with a sweet house barbecue sauce served with pickles and grilled onions on the same soft, kolache-style buns served with the Papa’s burgers.
“When we were testing this out, I went to different barbecue restaurants and ordered a simple chopped sandwich … it would take five minutes or more to get it,” owner Robert Walker said. “Our model is to have the product ready and serve out the quickest barbecue in all the area. Everything is built around speed.”
Quickdraw BBQ is drive-thru service only, and sandwiches can be paired with a lineup of four types of kettle potato chips and canned sodas. And that’s it.

The meats will be smoked off-site by pitmaster Jesse Tindall of Tindall BBQ. Tindall and Walker have partnered multiple times throughout the years on catering jobs.
The barbecue sandwiches have been tested and sold off and on at Papa’s Burgers for about a year as a special menu option.
“The plans were pretty much drawn up on the side of a truck,” Walker said. “Everything transpired very quickly once we found the space.”
Walker said that once Quickdraw BBQ gets up and running, additional sandwiches such as sausage and turkey may be offered as long as they can be prepared quickly. There also are plans to carpet the San Antonio area with up to 10 locations in coming years.
