Heard on the Street: Mobile pizza maker fires up new rig
A new rig is bringing fresh pizzas to area hot spots like farmers markets and breweries.
Stephan Jennebach has been known for his breads and pizzas since he rolled out his Firebrick Wood-Fired Pizza trailer in 2014.
Now he has shifted gears to ramp up his mobile pizza-making operation.
Jennebach hit the streets last week with a larger new trailer that is completely enclosed.
That means he and his team of nine employees can cook on-demand pizzas even when the weather turns chilly, for a longer-than-ever food truck season.
Jennebach, a baker by training, originally started making bread in a wood-fired oven at his Zumbrota home in 2012.
In a note about his new trailer, he wrote, “The new trailer was specifically designed to be wide open, so it has more of an ‘open air’ feel to it. In the event the weather turns on us, we can close side awnings as needed.”
The new setup also makes catering private events easier, with extra space for his staff to work.
Look for Firebrick Wood-Fired Pizza to make appearances at farmers markets in Rochester, Zumbrota, Lake City and Goodhue.
It’s also slated to make stops at breweries including Rochester’s LTS and Little Thistle as well as Island City Brewing Co. in Winona.
