San Antonio’s Puerto Rican food truck adding a real restaurant

Tired of grabbing your gandules to go? Well, there’s good news coming down the road.

Chef Pablo Curbelo, the force behind Puerto Rican Grub Express, is expanding his operation into a brick-and-mortar establishment. The new restaurant will seat about 60 after a remodeling of the property at 4413 Rittiman Road — the address’ parking lot is currently a base for the truck.

Curbelo, a longtime service industry veteran who’s run catering outfits and hospital kitchens, said he hopes to open in the next three to four weeks. His menu will include island favorites including mofongo, pernil, empanadas, arroz con gandules, Cubano sandwiches and more.
